Procurement Manager

We are looking for a proactive and commercially minded Procurement Manager to oversee procurement activities across our South African operations. This role is central to ensuring that our restaurants, support teams and business functions have access to the products, services and supplier partnerships they need to perform at their best.
Working closely with operational teams and key suppliers, you will balance quality, cost efficiency and reliability while building procurement processes that support the continued growth of our business. Your Mission
You will ensure that every purchasing decision reflects our commitment to quality, consistency and value. Through thoughtful supplier management, strategic sourcing and operational excellence, you will help create a resilient supply chain that supports our teams and enables exceptional guest experiences.
As a trusted business partner, you will identify opportunities for efficiency, negotiate favourable supplier agreements and ensure procurement practices remain aligned with the needs of a growing organisation.
What You'll Be Doing
Procurement Strategy & Business Plan Execution:
· Support the Global Procurement Director in executing the procurement strategy and annual business plan across the South African business.
· Translate group procurement priorities into practical category plans, sourcing calendars, approved supplier panels and savings initiatives.
· Develop and maintain category plans across food, beverage, packaging, equipment, OS&E, services and relevant indirect spend categories.
· Build cost models, benchmark pricing and market intelligence to support improved sourcing decisions and supplier negotiations.
· Identify opportunities to simplify category complexity, improve quality, reduce total cost of ownership and strengthen supply resilience.
Category Strategy, Sourcing & Supplier Panels:
· Develop sourcing strategies for key categories, balancing cost, quality, availability, brand requirements and operational practicality.
· Run quotation, tender and RFP processes where appropriate, ensuring fair comparison, clear specifications and documented decision-making.
· Maintain approved supplier panels, product specifications, pricing files, lead times and category information for business use.
· Benchmark supplier pricing and commercial terms against market alternatives to ensure competitiveness and value for money.
Supplier Management, Negotiation & Contracts:
· Source, evaluate, onboard and develop reliable suppliers aligned to quality, food-safety, brand, operational and compliance requirements.
· Lead commercial negotiations, contract renewals and service-level discussions to secure favourable pricing, terms, rebates and supply commitments.
· Build long-term supplier partnerships that support innovation, consistency, operational growth and franchisee confidence.
· Maintain supplier contracts, pricing agreements, BBBEE/vendor documentation, approved specifications and governance records.
· Manage supplier escalations, non-conformances, service failures, quality concerns and supply-risk issues through to resolution.
Franchisee, Operations & Stakeholder Alignment:
· Collaborate with franchisees, restaurant operators, operations leaders, area teams, development, marketing, finance, culinary/product, quality, supply-chain, logistics, systems and store teams.
· Secure stakeholder buy-in for preferred supplier agreements, product changes, pricing updates, sourcing decisions and procurement process improvements.
· Communicate supplier changes, product specifications, pricing movements, lead times, supply risks and operational requirements clearly and timeously.
· Partner with development and project teams on new restaurant openings, refurbishments, equipment sourcing, OS&E requirements and lead-time planning.
· Work with finance and operations to support purchase compliance, budget control, accurate reporting and adoption of agreed procurement standards.
Purchasing, Order Management & Operational Support:
· Oversee purchase orders and supplier follow-up to ensure timely delivery of goods and services required by restaurants and support functions.
· Coordinate with internal teams and suppliers to ensure the efficient flow of products and services that impact production, openings and operations.
· Support inventory management, stock availability, critical-item planning, slow-moving stock review, product rationalisation and ordering discipline.
· Work closely with the Systems Manager to improve item master data, pricing files, approved supplier lists, procurement workflows and reporting.
Supplier Performance, Quality & Risk Management:
· Implement supplier scorecards, reviews and KPIs covering quality, price, availability, reliability, technical support, service levels and responsiveness.
· Work with culinary/product, quality, operations and suppliers to ensure purchased products meet specifications, food-safety requirements and brand standards.
· Perform supplier and category risk assessments to reduce exposure to stock shortages, cost spikes, single-source dependency and service disruption.
· Develop mitigation plans including dual sourcing, alternative suppliers, contingency planning and improved supplier communication.
Governance, Compliance & Controls:
· Maintain procurement policies, approval processes, ethical sourcing standards, audit documentation and contract controls.
· Ensure supplier onboarding and vendor records are complete, accurate and aligned to company governance, BBBEE and compliance requirements.
· Keep accurate records of supplier approvals, pricing, specifications, contracts, tenders, savings, rebates and key commercial decisions.
· Ensure procurement activity supports internal controls, food-safety requirements, legal obligations and Tashas Group brand standards.
Cost Control, Reporting & Performance Improvement:
· Track savings, price movements, supplier service levels, category risks, purchase compliance, contract coverage and budget impact.
· Prepare regular procurement reports and performance updates for the Global Procurement Director and relevant stakeholders.
· Monitor market pricing, commodity inflation and supplier cost increases, and recommend mitigation actions to protect profitability.
· Identify cost-saving, value-engineering and process-improvement opportunities without compromising quality or brand standards.
· Continuously improve procurement systems, supplier-management processes, reporting accuracy and ways of working.
Leadership & Capability Development:
· Manage, guide and support buyers or procurement administrators, where applicable.
· Set priorities, allocate work, track delivery and ensure procurement administration is accurate, disciplined and timely.
· Build procurement capability, supplier-management discipline and commercial awareness within the team and across stakeholder groups.
· Promote cross-functional collaboration, service-led support and a practical approach to company-owned and franchise restaurant needs.
What We're Looking For
Proven experience in procurement, purchasing or supply chain management.
Strong negotiation and supplier relationship management skills.
Experience managing procurement budgets, contracts and supplier performance.
Excellent analytical and problem-solving abilities.
Strong organisational skills with exceptional attention to detail.
Confidence working across multiple stakeholders and business functions.
Experience within hospitality, retail, food service or FMCG environments will be advantageous.
A proactive, solutions-focused approach and a commitment to continuous improvement.
